Anyone happen to know this and why? I mean, I've seen dozens of weaponsmiths and armoursmiths; yet I haven't seen anyone talk about selling jewelry, potions, or the like.

So far ive noticed that hairstylist is the least chosen profession.

Reason being everyone can easily take up herbalism --> Free potions up to moderate ones.
Alchemy potions are somewhat expensive, and since multitude of lesser potions works just as well most players won´t buy greater potions.
Staffs are still regulary on sale.
Enchanting is resource consuming business, and not many want to invest too much on minor improvements you get with it. There however is some enchanters out there, but with pricces they have to ask i doubt they have too much customers, and atleast not enough to support more enchaters.
Jewelry is useless without enchanting, you can only make mundane trinkets and those won´t sell on their own.
Tailoring is nearly useless too, since anything lower than leather won´t sell, and even then it´s almost cheaper to get chain armor since it doesn´t hinder you´re movement and gives better bonus.
Some sell bone armor sets, but they´re only worth buying for melee/casters with high skill levels, and there´s not much of these around. (most use metal armors anyway...).
Bags can be sold, but they sell <20g.
Extravagant robes sell for ~200g/set, but due to low number of pure mages there´s not a lot of market for them.
Crafters that work with bigger things (ships, cities, etc.) work for their clans or sell products through forums.
All in all least populated craft might be jewel smithing due to it´s total uselessnes. Followed by tailoring.

If you're looking for a crafting path, I suggest first just working gathering. Logging seems to be the most effective route to start with, as wood is the base material for cheaply and effectively getting Woodcutting, Bowyer, Armorsmithing, and Weaponsmithing skills to 100.0. You can quickly get all these skills into a range where the benefits provided by them are useful to you, but aren't going to make you much money. They also are very useful if you're in a clan as a dedicated crafter of a certain type. But you're not going to find a skill that is going to make you a successful merchant at this point in time. It is almost always more effective to just sell resources than it is to make something with them. This probably won't stay the case forever, but it is the case right now.
If you're going to be a crafter I'd suggest working on mastering you're gathering skills first, then after you've done that use all your resources to master a craft. There is the possibility that crafting will yield better results in the future, and so on that basis unused resources are going to be much more valuable to you than used resources.

tailoring is good for mages, but more so for bone armor then robes and hoods.
that isn't to say robes / hoods won't be improved on, but their current state sucks.
The armor in tailoring does pay off if you are a caster though.
jewelsmithing rare taken cause as said without an enchanter its kinda pointless, also it so easy to do anyone can. However enchanting quality does depend on base item.
Later on it will pay off, For example me and a high enchanter are cranking out +5 dex rings and necklaces, doesn't seem like much till your 15 more dex than guy your fighting. Problem is the 100 gold a pop to enchant. Means your wearing 300 gold worth of gear.
construction is rarely taken, but its cause most guilds focus 1 person into it, so they can master the skill and cut down on fails, same with shipbuilding.
