Do mobs (like players) drop all the loot that they use against you? E.g if they look like they have full plate on do they drop the full plate or just some random crap?

just the weapons + 0-2 random armor pieces from the set the were using
also reagents if they are spellcasters

it kinda sucks that it is not really randomized at all in this game. that is one major disappointment.

A fully sandboxed game would allow any player to pick off anything of the mob they just killed.

It was originally stated you could loot everything that you can see a mob using...as of yet, this is not accurate. I imagine they were worried it would dump too items into the game. <shrugs>

I don't understand why you would even think that. In Diablo 1/2 you get random loot. Not here. However you get keys sometimes and reagents... So some is randomized. And I like it the way it is now. And it makes sense.
And it is also realistic that if you fought a full plated orc and you killed it, you trashed/destroyed some of its armor too.

If you see a kobold wearing armor, it's going to drop it.
It's also going to drop all the weapons it is using.
I haven't fought against any critters wearing a full plate. But I expect they would drop pieces of it.

They should drop everything they used, but with very low durability (they use it, right?) - so vendor wont buy worn stuff. At least noone will run naked any more ;)
Ofc sometimes they can drop brand new armor piece, but usually it should be complete set that is almost broken (for starting mobs).

Well, imagine you go out with your group and farm black knights. Each of them drop a full set of plate.
You can say good bye to any kind of economy then.

by random, I meant this
same number of arrows, same number of regs.
Also never any randomly magical versions of the same weapons.
